When it comes to meals that are healthy, quick, and enjoyed by even the fussiest eaters, this One Pan Risoni and Tomato recipe is a winner. It’s colourful, full of flavour, and comes together in just over 30 minutes – all in a single pan.
At Head Start, we love meals that do more than fill hungry tummies. We look for recipes that introduce new vegetables, build independence through hands-on cooking, and encourage kids to explore texture and taste – and this one does all three.
Why This Recipe Works for Families and Kids
1. One Pan = Less Mess
For busy families or educators prepping for a group, fewer dishes means more time spent on what matters. This all-in-one method makes for easy cooking and cleanup – no separate pots for pasta or sauces!
2. Nutrient-Rich Ingredients
This recipe includes a mix of colourful vegetables, fibre-rich legumes, and dairy, giving kids a balanced meal that’s naturally low in salt and sugar but high in flavour and goodness.
3. Kid-Approved Texture
Risoni, also known as orzo, looks like rice but is actually a small pasta. Its smooth texture and bite-sized shape are appealing and manageable for younger children – even those hesitant about vegetables.
4. Customisable for Dietary Needs
With the right swaps, this dish can be made gluten-free, dairy-free, or vegetarian, making it adaptable for different children’s needs.
Ingredients (Serves 4)
- 320g punnet mixed cherry tomatoes
- 1 brown onion, finely chopped
- 2 garlic cloves, crushed
- 3 cups salt-reduced vegetable stock (heated)
- 1 cup risoni
- 400g cherry tomatoes
- 2 tbsp no added salt tomato paste
- 120g baby spinach leaves
- 1.5 cups frozen peas
- 375g light, smooth ricotta
- 1/3 cup basil leaves
- 1 lemon, zested and cut into wedges
Method
- Start with Flavour
Spray the cherry tomatoes, onion, and garlic with oil. Heat a heavy-based pan over medium heat and cook tomatoes for 3 minutes until lightly browned. Set aside. - Build the Base
In the same pan, add garlic and onion, cooking for another 3 minutes. Stir in the risoni and cook for 1 minute to toast lightly. Add the stock, stir well, and bring to a boil. Simmer gently for around 10 minutes, stirring often, until the liquid is nearly absorbed. - Add More Veggies
Add canned cherry tomatoes, tomato paste, and frozen peas. Simmer for another 5–8 minutes until tomatoes soften and peas are tender. - Finish with Freshness
Stir in the spinach until wilted. Remove from heat and spoon ricotta over the top. Sprinkle with lemon zest and fresh basil just before serving. Season to taste and serve with lemon wedges.

Why It’s Great for Kids
🥬 Vegetables in Every Bite
Cherry tomatoes, spinach, onion, peas, and garlic aren’t hidden—they’re part of the flavour and colour of the dish. This encourages kids to become familiar with whole foods in their natural form.
🧀 Creamy Without the Cream
Using light ricotta gives this dish a creamy finish without heavy creams or processed sauces. It also provides calcium and protein, important for growing bones and muscles.
🍋 A Hint of Zest
Adding lemon zest and fresh basil introduces children to herbs and citrus in a gentle way, expanding their flavour palate.
Learning Through Cooking
At Head Start OOSH, cooking is more than a chore—it’s a learning experience. A recipe like this helps children:
